Brownie Cupcakes 

4 oz. unsweetened chocolate
1 cup butter/margarine
1/4 tsp. butter extract
1 cup flour
1 1/2 cup chopped pecans
1 3/4 cup sugar
4 eggs, beaten
1 tsp. vanilla

Melt chocolate and margarine over low heat. Add butter extract and chopped pecans. Stir well. Remove from heat, set aside. Combine flour, sugar, eggs and vanilla, add chocolate mixture, blending until moistened. Spoon 3 tbsp. Batter into each paper lined muffin cup. Bake at 325 F. For 30 to 35 minutes, or until done. Sprinkle with powdered sugar if desired.
