Butterscotch Banana Cake
3/4 cup shortening 1 tsp. soda 2 1/4 cup sugar 1 tsp. baking powder 1 1/2 tsp. vanilla 3/4 tsp. salt Grated rind of 1 lemon 1/3 cup buttermilk 1 1/2 cups mashed bananas 3 cups cake flour
Cream shortening; add sugar gradually, beating until light. Add vanilla and lemon rind, then eggs, one at a time, beating thoroughly after each.
Butterscotch filling:
3 tbsp. butter 1/4 cup flour 1/2 cup brown sugar, packed 1/2 tsp. salt 1 1/2 cups milk 1 egg, beaten 1/2 tsp. vanilla
Melt butter. Add sugar and cook 2 minutes in top of double boiler, over direct heat. Add 1 cup milk, heat over boiling water. Add remaining milk, flour and salt until smooth. Stir into hot mixture. Cook 5 minutes, stirring constantly. Cover. Cook 10 minutes longer, stirring occasionally. Add mixture to egg, return to double boiler and cook 2 minutes. Cool. Add vanilla.
