Fresh Apple Cake 

4 cups diced apples
2 cups sugar
1/2 cup oil
1 cup chopped nuts
2 eggs beaten
2 tsp. vanilla
2 cups flour
1 1/2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt 

Mix sugar and apples. Mix together the oil, eggs, vanilla. Add with nuts to sugar/apple mixture. Mix together the flour, baking powder, baking soda and salt. Add to batter. Pour into well greased oblong pan. Bake at 325 F. For 1 hour and 5 minutes, or until cake comes away from side of pan.
