Golden Wonder Cake
2 1/2 cups sifted cake flour 3/4 tsp. salt 2 tsp. baking powder 1 cup sugar 1/2 cup soft shortening 1/2 tsp. mace 5 medium egg yolks, unbeaten 1 tsp. vanilla 3/4 cup milk
Preheat oven to 350 F. Grease a loaf pan, line with waxed paper. In large bowl, sift flour, baking powder, salt, sugar, mace. Drop in shortening egg yolks, vanilla and half the milk. With mixer at low speed, beat until flour is entirely moistened, change speed to medium and beat 2 minutes, scraping as necessary.
Pour in rest of milk, beat 1 minute. Pour into pan. Bake for 1 hour to 1 hour 10 minutes. Cool in pan on wire rack 10 to 15 minutes. Remove from pan, finish cooling on rack. (Top of cake will crack). Store, covered.
