Harvest Apple Cake
3 medium tart apples 1/4 tsp. salt 6 tbsp. sugar 1 tbsp. cinnamon 2 3/4 cups cake flour 4 eggs 3 tsp. baking powder 2 cups sugar 1/3 cup orange juice 1 cup oil
Toss apples with 6 tbsp. Sugar and cinnamon. Sift dry ingredients. Grease 10" bundt or tube pan. Beat eggs, slowly adding sugar. Beat until thick and fluffy. Add oil in a steady stream, beating until well blended. Add dry ingredients 1/3 at a time, alternating with orange juice. Beat until smooth. Put 1/3 of the batter in the pan. Drain apples, arrange half the slices over the batter. Repeat layering. Bake at 350 degrees for 1 hour. Cool in pan. Needs no icing. but you can dress it with a dusting of powdered sugar if you desire.
