Italian Angel Food Cake
1 packaged angel food cake 1 lb. ricotta cheese 1/2 cup powdered sugar, sifted 2 tbsp. Curacao 2 tbsp. chopped, toasted almonds 1 tsp. vanilla 1 oz. semi sweet chocolate, grated 1/2 cup candied red cherries, quartered
Place cake smooth side up on a board. Using sawing motion, with sharp knife, cut cake into 3 even layers. In large bowl beat cheese about three minutes or until smooth. Add sugar, chocolate, curacao and vanilla. Beat 2 minutes. Add cherries and almonds. Place bottom layer on serving plate, spread with half the filling; add middle layer, spread with remaining filling, set top layer in place. Chill about 2 hours or until filling is firm.
