Mini Cheesecakes

12 Vanilla Wafers

2 8 oz packages cream cheese

1/2 cup sugar

1 tsp vanilla

2 eggs

Line a muffin tin with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla, and sugar until well blended. Add eggs and mix well. Pour the mixture over wafers-filling about 3/4 full. Bake 25 minutes at 325*. Top with fruit, preserves, nuts or melted chocolate. (Try melted chocolate with 1/2 of a strawberry in the center of each)
