Persimmon Cake 

1/2 cup shortening
1 cup sugar
1 cup persimmon pulp
2 eggs
1/4 tsp. baking soda
2 cups sifted flour
3 tsp. baking powder
1/2 tsp. salt 

Cream shortening and sugar together, add the persimmon pulp and beaten eggs. Sift dry ingredients and add to liquid mixture. Beat well, pour into greased pan and bake at 350 F. For about 1 hour, until done.
