Pink Marble Cake
2/3 cup soft butter 2 1/2 tsp. baking powder 1 3/4 cup sugar 1 tsp. sugar 2 eggs 1 1/4 cup milk 1 1/2 tsp. vanilla Red food color 1/4 tsp. peppermint extract 3 cups sifted cake flour
Cram butter, sugar, eggs and vanilla until fluffy. Then beat 5 minutes on high speed. Sift together the flour, baking powder and salt. Add alternately with milk to creamed mixture, at low speed. Pour 2/3 of the batter into two greased and floured 9 inch layer pans. Add food color and peppermint extract to remaining batter, dot over batter in pans, cut through several times with knife to get marbled effect. Bake at 350 F. For 30 to 35 minutes. Cool and frost with a fluffy boiled icing, tinted pink.
