Potato Cake
1 3/4 cups sugar 3/4 cup butter or margarine 2 eggs 1 cup cold mashed potatoes 2 sq. unsweetened chocolate 1 cup chopped walnuts 2 cups flour 2 tsp. baking powder 2 tsp. cinnamon 1 tsp. nutmeg 1/2 cup milk
Grate chocolate. Cream together sugar and butter. Add eggs, one at a time, beating well after each addition. Add mashed potatoes, chocolate and nuts. Stir until well blended. Combine flour, baking powder and spices. Add alternately with milk to creamed mixture. Spoon thick batter into greased and floured 13x9 pan. Bake at 350 F. For 45 minutes or until cake tests done. Cool. Sprinkle with powdered sugar, or dollop with sweetened whipped cream.
