Red Beet Chocolate Cake 

1 1/2 cups sugar
3 eggs
1 cup oil
1 1/2 cup beets, sieved
2 sq. melted chocolate
1 3/4 cup flour
1 1/2 tsp. soda
1/4 tsp. salt
1/4 tsp. vanilla 

Combine sugar and eggs; add oil, beets and chocolate. Sift flour, soda and salt; add with vanilla to other ingredients. Bake at 350 F. For 20 minutes in 13x9 pan.
