Red Devils cake
2 cups cake flour 2 eggs 1 1/4 tsp. baking soda 1/4 tsp. salt 1/2 cup butter 1 cup sugar 2 oz. unsweetened chocolate, melted 1 tsp. baking powder 3/4 cup milk or buttermilk 1 tsp. vanilla 1/2 cup boiling water
Sift and measure flour. Sift three times with baking powder, soda and salt. Cream butter until light and lemon colored. Gradually add sugar, beating after each addition until light and fluffy. Beat eggs until they are almost as stiff as whipped cream, add to creamed mixture. Add chocolate, mixing well. Combine milk and vanilla. Alternately add dry ingredients and milk, beating well after each addition until smooth. Add boiling water, beating well. Turn into greased pan. Bake at 350 F. For 30 minutes or until done. Cool. Frost with soft chocolate frosting. Let cake stand at least two hours before cutting to allow the red color to fully develop.
