Sauerkraut Cake
2 1/2 cups flour 1 tsp. baking powder 1 tsp. soda 1/4 tsp. salt 1/2 cup unsweetened cocoa 2/3 cup butter 1 1/2 cups sugar 3 eggs 1 tsp. vanilla 1 cup cold water 2/3 cup rinsed,drained, chopped sauerkraut
Grease and flour two 8 inch round cake pans. Sift flour, baking powder, soda, salt and cocoa together. In large bowl, cream the butter and sugar. Thoroughly beat in eggs, one at a time. Add vanilla. Stir in dry ingredients, in four additions, alternately with water, beating until smooth after each addition. Begin and end with dry ingredients. Stir in sauerkraut. Pour into pans. Bake at 350 F. For 30 minutes.
