Snow White Cake 

2 1/4 cups sifted flour
1 1/2 cups sugar
3 1/4 tsp. baking powder
1 tsp. salt
1/2 cup shortening
1 cup milk
4 egg whites
1 tsp. vanilla 

Heat oven to 350 F. Grease and flour two 8 inch layer pans. Sift flour with sugar, baking powder and salt into large bowl. Add shortening and milk, blending well with mixer at lowest speed.  Beat 1 1/2 minutes. Add egg whites and vanilla, continue beating 1 1/2 minutes. Pour batter into pans. Bake for 30 to 35 minutes until cake is golden brown and springs back when lightly touched in center.
