Sunny Jim Fudge

A vintage fudge recipe, found on the top of an old Sunny Jim peanut butter jar I got at a garage sale!

1 cup white sugar
1 cup brown sugar
2 teaspoons vinegar
1/2 cup orange juice
1/2 cup Sunny Jim peanut butter (just use your favorite peanut butter, because they don't make this anymore)
2 tablespoons grated orange rind
1 teaspoon vanilla extract

Mix sugars, vinegar and juice. Cook to 234 degrees or when 1/4 teaspoon of mixture forms a soft ball when dropped in cold water. Remove from heat. Add peanut butter and grated rind. Beat till creamy. Add vanilla. Pour into buttered cake pan. Once firm, cut into squares. Enjoy!
